Video: Chocolate Zucchini Loaf

Ingredients:

one cup of flour

1/2 cup of cocoa powder

one teaspoon of baking soda

1/2 teaspoon of salt

1 1/2 cups of shredded zucchini

two eggs

1/4 cup canola oil

1/4 cup melted butter

3/4 cup brown sugar

chocolate chips as desired

Method of Preparation:

1. Preheat your oven to 177 °C (350 °F). Grease a loaf pan with butter in advance of baking.

    2. Combine dry ingredients: in a medium bowl, whisk together the one cup of flour, a 1/2 cup of cocoa powder, one teaspoon of baking soda, and a 1/2 teaspoon of salt. Set this aside.

    3. Combine wet ingredients: in a separate, large bowl, whisk together the two eggs, a 1/4 cup canola oil, a 1/4 cup melted butter, and 3/4 of a cup of brown sugar until it’s all well combined.

    4. Gradually add the dry ingredient mixture into the wet ingredients, mixing until it’s combined.

    5. Gently fold in the 1 1/2 cups of shredded zucchini and as many chocolate chips as you would like. Do not overmix this.

    6. Pour the batter into the prepared loaf pan. Add some more chocolate chips on top if you wish. Then bake this for fifty to sixty minutes, or until a toothpick inserted into the center comes out clean. Finally, let the loaf cool in the pan for about ten minutes before transferring it to a wire rack to cool completely before slicing.
