Apple Cake with Meringue (Ābolu Kūka ar Beze)

As part of Eesti Elu’s food feature, we sought out recipes from the community and readership, and that includes staff at Tartu College.

The following recipe was sent in by TC's Finance Manager Amanda Peirāga, whom we’ve had a chance to get to know better in one part of the “Meet the TC Community” series. Read on for a comforting dessert that you can whip up (literally!) quite quickly.

Ingredients:
– 4 apples
– 3 eggs
– 2 cups of flour
– 1.5 cups of sugar
– 200 g of butter (room temperature)
– 1.5 tsp of baking powder

Method of preparation:

1. Separate the egg yolks from the egg whites.

2. Whip the egg yolks together with half a cup of sugar and the room temperature butter, until the combination is creamy.

3. Add the flour and baking powder, and mix until a smooth batter forms.

4. Transfer one third of the batter to the fridge to chill.

5. Spread the remaining batter into a round baking pan, pressing it slightly up the sides.

6. Prick the dough lightly with a fork to prevent it from puffing up.

7. Peel and grate the apples, then spread it evenly over the dough.

8. Whip the egg whites with the remaining sugar until stiff peaks form.

9. Spread the whipped egg whites over the grated apples.

10. Remove the chilled batter from the fridge and grate it over the top.

11. Bake at 200°C for about 30 minutes, or until golden.
