Markus Pukonen’s West Coast Rosolje

So be sure to follow us on TikTok! But in the meantime, one of our video contributors, Markus Pukonen, has shared a recipe.

You will have seen Markus and his motorless journey around the world written about in Eesti Elu back in July 2023. He was also a guest on EstoCast, Eesti Elu and VEMU Estonian Museum Canada’s podcast. These days, Markus lives in a cozy cedar cabin on the remote west coast of British Columbia, a paradise for surfing, sailing, hiking, and foraging. Which is where he’s been making this family recipe for rosolje as of late.

Here’s what you’ll need:

-5 red potatoes, boiled the day before

-3 hardboiled eggs, chopped finely

-3 small beets (cooked)

-4 pickles

-1 McIntosh apple

-3/4 of a jar of herring

-1/2 of an onion, chopped very, very finely

-(optional: 1 kilo of roasted beef)

-1 jar of mayonnaise

Making it is simple. Take each of these ingredients, boiling them as specific. Cut them into pieces. Mix everything except the mayonnaise together in a big bowl. Then mix in the mayonnaise and serve.
