These adorable cookies are so much fun to make with kids! Baking the egg candies for the last few minutes cracks the colourful shells and gives the appearance of about-to-hatch bird eggs in a nest.

Recipe
- 200 g sliced almonds
- 1 egg white
- 3 tbsp powdered sugar
- 3 tbsp liquid honey (or creamed honey warmed slightly)
- 1/4 tsp sea salt
- 30 mini egg candies (such as Cadbury Mini Eggs)
Method of preparation
Preheat oven to 300F. Line 2 baking sheets with parchment paper.
In bowl, combine whipped egg white, powdered sugar, honey and sea salt. Mix thoroughly. Add almonds and mix thoroughly to combine. Divide into 10 piles, pressing a well into the centre of each pile. Bake for 20 minutes. Press 3 egg candies into each well; return to oven and continue to bake until cookies are golden brown and eggs have cracked, about 5-10 minutes more.
Let cool completely before serving. Store in an airtight container for up to 1 week.
