Inside-Out Grilled Cheese
Tip: Add a few splashes of whiskey or port while caramelizing onions for a big boost of flavour!
Recipe
- 4 slices sourdough or Calabrese bread
- 2 tbsp butter
- 3/4 cup shredded mozzarella
- 1/2 cup shredded Gruyère
- Optional Fillings: Caramelized Onions
- Baby Arugula
- Sliced Prosciutto
Method of preparation
Spread one side of each bread slice with butter; arrange mozzarella and other toppings (if using) on unbuttered sides of bread slices. Sandwich together.
Heat large nonstick pan over medium heat. Cook sandwiches, flipping once, until golden brown and cheese is melted, about 6-8 minutes. Remove sandwiches; sprinkle half of Gruyère in two lines in pan. Press sandwiches into cheese. Cook until cheese is golden. Remove sandwiches; repeat with remaining cheese on other side. Serve with DIY ketchup.
DIY Ketchup
Hands on time: 5 minutes

Makes: about 1 1/2 cups

- 2 cups passata
- 1/4 cup balsamic vinegar
- 1 tbsp brown sugar
- 3/4 tsp salt
Method of preparation
In medium pot over medium heat, combine passata, vinegar, sugar and salt. Bring to a boil; reduce to low. Cook, stirring frequently, until reduced by about half and thickened, about 20-25 minutes.
Spice it up!
-For a sweet and spicy version, stir in 1 tbsp Sriracha after cooking.
