Just like the previous Jellied Avocado Salad recipe, this is from Hilja Jukkum's lecture/demonstration series in the 60s.
Recipe
- half a pound of tomatoes
- 1 banana
- fresh parsley
- For the marinade: 1 tbsp of oil
- 2 tbsp of lemon juice
- a bit of salt and sugar
Method of preparation
- Mix the marinade ingredients.
- Wash the tomatoes and cut them into thin slices.
- Peel and slice the banana.
- Pour the marinade over the slices and let the salad rest a bit before serving.
- Garnish the salad with chopped parsley.
