Video: how to make perfect cinnamon rolls

Like we've talked about before in Eesti Elu, Estonia's YouTube cooking presence is very strong. And in the lead-up to VEMU / Estonian Museum Canada's fundraising dinner, we wanted to introduce you to chef Joel Ostrat.

Ostrat will be making the food for this year's fundraising dinner and has a YouTube channel of his own. In this episode, he travels to Tallinn to learn from master baker Sandra Daškova. Daškova won on the TV series Eesti parim pagar and has some excellent tips and tricks for delicious cinnamon rolls. Consult the recipe below and the video (in Estonian) for clear steps to making the rolls at home.

Recipe

  • Dough: 600-700 grams of flour
  • 40 grams of yeast
  • 80 grams of sugar
  • 9 grams of salt
  • 80 grams of room temperature butter
  • 335 grams of egg and milk
  • For brushing on the rolls: 1 egg and the same amount of water
  • Chocolate glaze: 2 tbsp of cocoa
  • 4 tbsp of milk
  • 70 grams of butter
  • 130 grams of sugar
