The workshop was led by Katrin, a baker and food scientist who brought both technical knowledge and practical patience to the session. Pirukate making has its tricky moments – dough consistency, shaping, knowing when the filling-to-pastry ratio is right – and those are the kinds of skills that are hard to pick up from a recipe alone. Having an experienced hand in the room made a real difference.

The church oven had its own timeline, stretching the baking phase a little longer than planned, but the golden results were worth the wait. Everyone left with a box of warm pirukad and, hopefully, the confidence to try making them at home.
