Pirukad, Flour, and a Full Kitchen: MES Heritage Cooking Series Continues (+ gallery)

On Saturday, May 9th, the Montreal Estonian Society hosted another sold-out workshop in its Heritage Cooking Series, this time focused on traditional Estonian pirukad. Twelve participants gathered in the church kitchen to spend the morning making porgandipirukad and lihapirukad from scratch.

The workshop was led by Katrin, a baker and food scientist who brought both technical knowledge and practical patience to the session. Pirukate making has its tricky moments – dough consistency, shaping, knowing when the filling-to-pastry ratio is right – and those are the kinds of skills that are hard to pick up from a recipe alone. Having an experienced hand in the room made a real difference.

The church oven had its own timeline, stretching the baking phase a little longer than planned, but the golden results were worth the wait. Everyone left with a box of warm pirukad and, hopefully, the confidence to try making them at home.
